Simple easy quick Italian recipes: homemade ravioli pasta for Christmas



In the area Romagna of Italy they are called cappelletti, this is mostly a widely used dish on Christmas day which is served in broth.
The most used ingredient to make this Pasta is Mortadella. Mortadella is commonly known around the world as bologna.

mini ravioli:

250g cottage cheese (Ricotta)

150g Parmesan cheese

150g bologna ham

Pinch of nutmeg


Put in a food processor and mix the Mortadella them together into a puree, next you will need to read my older article on how to make the dough as the base is always the one for other filled pastas.
