Mom I hate Pumpkin - Not any more!

We often hear our kids every now and then say this and not only pumpkin but other kinds of food like vegetables.

This is what my son told me, and I said ok, lets see if he changes his mind.

Steps: Boil the pumpkin and or cook it in the oven. Then marsh it, if you have some parmesan then that is great, but if you don't have it is all the same. You can change my recipe and add also potatoes and make a pureè of potatoes with pumpkin.

(Dough Std recipe- 100g of wheat flour will mix well with one egg. No need to add water )
When you have rolled the dough into very thin, cut into small squares and add using a spoon the pumpkin. Close as in photo, placing them on a kitchen cottoc cloth on the table. When finished
put cook them in boiling water for 3 minutes and sieve.
Serve as you like. I served with garlic and tomatoes.

Fresh sage and butter would be great.

Read older articles in this blog for serving ideas.

How to make Tuna Sauce

When all there is in the house is Tuna, tomato and some pasta: What do you do?

Pasta with Tuna recipe

What I do when I only have a few things in house like Tuna is:
Garlic crushed, olive oil then I add 3 or 4 fillets of anchovies which I try to always have in the fridge as I buy and use them sparingly whether on pizza or pasta sauce.

Then I add tomatoe (if fresh cut into small pieces but mainly I have tomato puree or the paste. Then I add together with the tuna fish plus some salt, pepper or chilli.
Cook it slowly..when the sauce is reduced thick remove from heat and in the meantime you have boiled or boiling your pasta and serve with the tuna sauce

My friend is working Mommy in Italy and so she does not have much time to during the week so she makes all these kind of sauces and she stores in the freezer and every evening she has everything ready.

What containers to use for storage?
Never mind, make it a habit of keeping those jam/marmalade bottles and they really are useful to me in storing food like this.

Avoid using plastics for storing food not for anything but watch out what's in those plastic bottles read my post herePlastic Poison?: Bisphenol A or bpa an enemy in fridge store on our tables

Simple Italian recipe: Pasta and fagioli as pasta with beans

There are many ways of utilising the simple ingredients that you have in the house to come up with a meal that looks like just been delivered from Italy.

This is easy and simple really: Beans (canned beans), heat oil in a cooking pot add some whole peeled garlic so you can remove it someone does not eat garlic. As for my case we all love garlic so I crush it and cook together. Add a spoonful of tomato puree and add together a can of beans whatever white borlotti or the other I usually get what I find in the country I am in. Now, lately I have used also the baked beans but removing the liquid as it is kind of sweet but if you are using normal beans put in the whole content of the can. Cook for few minutes and using a vegetable machine pass it to cream like, or use a kind of crusher like gadget will try to find it and put a picture here. After which you add your pasta and cook stirring so that does not attach at the bottom.

I usually add a few leaves of Rosemary, Rosemary will do well in your balcony even in the house, why not use it as a decorative as well as herb.

Enjoy your pasta after 7 or 8 minutes cooking. Serve with bread if you like

Italian simple recipe: fresh homemade pasta

Fresh Pasta is very easy to make, all you need is flour and eggs, that's it nothing else.

How do you go about it?
simple: for every 100g of flour you need 1 egg.

make a mould with the flour and in the center make a hole and put the eggs,
you need to work a lot the mixture until you get a smooth dough, then leave to rest for an hour.
Then what next?
You divide into small balls, roll each at a time.
But?
Need to roll it until it is very thin, then cut into shapes that you want. Could be the long strips (tagliatelle) or the short ones, next we learn how to make the filled pasta, for now learn how to get to the simple basics. Cut into strips.

Note!! A true Italian Pasta made freshly has only flour and eggs, no salt no water, this is what I have learn't grandmoms I have learn't from.

Can be served with Ragù sauce that I have discussed earlier in this blog.
Enjoy your Pasta and come back learn next stage...
