Basil




My basil:
Easily cultivated anywhere, even in small vases. Needs a lot of water and light
and when you have extra of it you can either dry it or freeze it for later use.

Its uses
one of the widely used aromatic plant in the kitchen for its flavour in salads, sauces, soups, meat etc

In Italy it is famous for its Genoa Sauce called Pesto. Most widely used in Italian recipes.

Other uses of this plant are: it can be used against mosquitoes, and has many therapeutic effects.

We are going to look in the near future some simple recipes that can use this plant. Come back soon! Everyday!

fruit in season



Markets are overflowing with peaches and many other fruits. This is the time to enjoy fresh fruit.

From shakes to smoothies and juices. It's only a plus to your health.

In the next few posts I'm going to consider fruits in season, so keep watching this blog and you will have many fresh, and healthy recipes for this season.

Italian break fast with a simple cake



Italian simple cake
ingredients:

150g potato starch
200g flour
200g sugar
100g butter
3 eggs
15g baking powder
Milk

steps:
mix the 3 egg yolks with the sugar and melted butter. Mix slowly with the flour and the potato starch, add the milk (till enough). Lastly add beaten egg white and the baking powder.

leave in the oven for 40 minutes at 180°

this can be used as a base for any type of decoration and also good as a tea cake.

Tiramisu recipe: Tiramisu the way I like it!






For most of you who are looking for christmas dinner recipes e.g.tiramisu with pictures, here you go.
ingredients:
250g of Mascarpone cheese
3 eggs
finger biscuits
3 teaspoons of sugar
cofee
Cocoa powder

In a container I mix the egg yolks with the sugar. I then beat the egg whites and I add them to the yolk and sugar mixture. Then I add the mascarpone and mix really well.

I then dip the biscuits into coffee and arrange them in the container, alternating a layer of biscuits with that of cream. I continue like this until I have used all cream. Then with the help of a sieve I put a small quantity of cocoa powder on top.
Then into the fridge.
If you have no time can have it done on the previous day.

Chapati my way!!!!!








To make Chapati is very easy, and they can go with any occasion that you are planning.
the ingredients include: wheat flour, pinch of salt (optional), warm water, oil.

When I make chapati I use a Kg of flour, this will make around 10 of them.
Make the dough as shown in the picture, then divide into discs. Roll each and apply some oil evenly on top, then roll this into a disc again and leave it rest as shown (i used a plastic bag) leave it until it is very soft.
Then roll again and cook it evenly as shown in the picture.

Serve with vegetable stews, meat stews, goes well also with cheese. Great as a dish, or even a snack. My son loves it!

Aubergines!


Today I prepared deep fried Aubergines and served with some grated cheese.
Store in the fridge for up to 4 days.

Remember Aubergines are very rich in calcium, phosphorous Vitamin A and C and Potassium
Seems like the skin has substances that benefit the liver, pancreas and intestines.
