Loving my kitchen and loving everything I use in the kitchen and spending little on unique kitchen stuff.

Loving food and loving to cook

Loving good food brings with it loving to cook. This is what I have learn't from years abroad since I left the slope of Mt.Kenya.
This picture was taken during my stay in Romania, dinner time a time for family.
I was looking at my pictures and this chicken made my mouth water and I think it's going to be dinner tonight.
I'm off to the supermarket.,
I will need:
Chicken
Rosemary
Sage
salt
garlic
white wine.

This chicken will be cooked on the pan and served with marshed potatoes and if you like accompany with buttered spinach.
I just boil the spinach, then drain, pass them to a pan with butter and crashed garlic toss for few minutes serve.

Spaghetti or macaroni with butter

Boil the spaghetti or macaroni until tender (al dente) in salted water do not over cook. When ready turn them into the sieve and drain all the water.
When drained put into a serving dish and add a generous quantity of butter. Then sprinkle with grated cheese and put extra grated cheese for everyone who wishes to add more of the cheese.
This is the simplest form of serving pasta. Especially have seen people use it when unwell and have no appetite for mixture of food types.

Pizza: The party is on

There is nothing as easy as preparation of this small style pizzas for a party. Reason, being everyone loves them and the presentation is awesome.

Everytime I prepare a party I have as starters these small style pizzas. Now, someone is asking how do you make them.
The process of making is the same as the pizza only that here I use a cup or a glass to get the small style pieces then I proceed with all other ingredients as I do for the bigger pizza.

Try and see how fun your children birthday party is going to be.

Pasta: Carbonara spaghetti recipe

Spaghetti alla carbonara

Spaghetti 350 g
Bacon about 100 g
2 eggs
Olive oil 2 spoonfuls
Grated Pecorino cheese about 40 g
Grated Parmesan cheese about 40 g
Salt
Pepper

While the spaghetti is cooking fry the bacon (if you do not have the Italian Pancetta other bacon will be fine) until crisp and golden. Whisk the eggs, grated cheese (both parmesan and Pecorino) and pepper if you like.

Sieve the Spaghetti al dente add them to the Pan with bacon, add the egg mixture to the spaghetti while mixing well and very fast so that the egg does not cook so much but remains creamy. Serve hot.

Another way of using your Pesto is with meat dishes, will go well as a dressing.

Pesto: Homemade fresh tastes good

The next step is to mix (add) a good quantity of olive oil. Again here depends on personal tastes, some like it very oily like the one you buy from shops and others like me I use everything sparingly without exaggerations. Use with moderation with sauces, oils and sugar and salts.

I hope you like the Pesto!

tonight I'm going to have pasta with pesto! You are welcome if you read this before I clean the plates.

Simple easy quick Italian recipes: Pesto Homemade fresh tastes good

Hey!, did you know that homemade Pesto is easy, simple to make? Well, take my word you need only few minutes to make yours.

Here are the steps to making it.

I wash my Italian basil, (found for sure everywhere) if I can find it in Bangkok you can find it in London or New York, since I do not have a mortar and pestle to do it manually I work it with the food processor. Mix basil and pine nuts and parmesan cheese and pecorino cheese (Pecorino is the Italian name given to any fresh, medium aged or matured cheeses made from sheep's milk)
then I work that together.
