Simple food Ideas - Skane - Sweden

Cooking in Lund Sweden

A few months ago I moved to Skåne area of Sweden. As I get settled and learn the new language, let's get busy in the kitchen. I love to cook especially Italian food. Please join me and explore the love for simple way of cooking, eating healthy and great on a recession budget here in Sweden.

I love potatos, when I was growing up in Kenya, area around Mt. Kenya , we had potato every day, its not a joke. Whether marshed, boiled, fried with beans, there was always space for potatoes. And potatoes there are  yummy. So, I still have the habit, potatoes and more potatoes - I just cannot bring myself to say no to potatoes.

So whats cooking today? As you can see from the plate it is as simple and yummy as it looks.
Marshed potatoes served with rucola and fresh tomatoes. On the side you have chicken breast roasted on the pan with only garlic, rosemary and sage.
If you have some basil, you know how lovely that goes with a tomato and a crushed garlic a bit of olive oil for rucola and tomato - you are on your way to impressing your guests.

Ps. Here in Sweden you can just pick instant potato puree it's great.

Happy New Year - Gott nytt år

Enjoy! 2018 the year of great cooking on a budget.

dangerously delicious homemade pies

Vegetable Cake the Finale

Everyone is talking of dangerously delicious pies how about sampling and trying this delicious pie in the recipe here: Adopt it to dangerously delicious pie filled with mushroom and or any other vegetables you have in the house:
And this is the end product. This is a great way for you and family to enjoy different kinds of vegetables in a simple italian way.
This simple healthy Italian recipe can be adapted to what you have around in the house.
Give it a try and by the way the same dough can be used for biscuits.

Vegetable cake: Torta salata

Next step in the series of making the spinach cake my way is that of rolling the dough and putting it in your oven dish as shown in this picture.

Then from there we will add the spinach cheese mixture and cook in the oven for around 15 minutes.

Vegetable cake: Torta salata

Spinach Cake

For the ingredients I used 300g of flour,80g of butter, 2 eggs, 2 table spoons of sugar, salt and 2 flat tea spoons of baking powder.

Cake making steps: I mixed all the ingredients and made a dough, then I put in a container (closed) in the fridge for 30 minutes.

Next step is preparing the cheese spinach filling.
The spinach filling is none other than parmesan grated, and boiled spinach. Mix together to form puree like you see in the picture. You can substitute the spinach with other vegatables.

Other fillings include, pumpkin and who knows how it would come out with the normal potatoes or taro? Will give a try!

Come back tomorrow for more on this spinach cake

Family restaurant: Prepare your stomach before going there

This is one of the servings I really enjoyed this time, beans with Italian sausage.
I imagine if you want to try it some onions, garlic, beans and sausage with a lot of tomato. I will try to prepare and post results here in the future.

beanswithsausage

During our stay in Italy, we enjoyed family dinners and lunches with friends.
The place we could not miss was Ristorante La Monda the family favourite.
If you are travelling to Forli or in the vicinity this would be great place to savour the local delicacy in a family owned restaurant.

All the food is great and big portions prepare your stomach before you go.
