5 cent rich easy and simple lasagne
Lasagne with mozarella from simple healthy Italian recipes
I know it will sound funny but the other day I found myself with an empty fridge but I had some left over meat sauce, few lasagne sheets that I had made previosly and a packet of mozarella cheese
Are you guessing what I did?
made a lasagne filled with leftovers and mozarella, guess what it was so healthy and easy that I would want to make again. Improvising is also my favourate when it comes to pasta

Composing Lasagne
Every layer of lasagne composed of besciamel, meat sauce and lasagne sheets
In order put lasagne sheet, add meat sauce or vegetables whatever is the ingredients for your lasagne then besciamel
My lasagna making secret: Add at the top a bit of grated parmesan, cook in the oven for about 25 minutes or until the crust looks crunch (this is how I love it)

The besciamel
For the besciamel we need the following a little wheat flour,butter, milk, pinch of salt, black pepper and nutmeg (remember nutmeg should be used in very little quantity) I do everything with my eyes so I need no measurement but let me find the quantities from my Italian recipe bible.
(Alternatively you can fill with cottage cheese or mozzarella)
Besciamella Sauce ingredients
50 g butter, 3 Tablespoon(s) flour, half litre milk

Lasagne: making of the lasagne
From the last lasagne post we saw the rolling of the dough into thin sheets.
Next step is to put water in a big pot on the fire to boil, add some salt.
The next step is to put these lasagne sheets to boil for around 2 minutes.
After which the lasagne sheets are ready to be removed from boiling water and
and the lasagne sheets go to cold water
From the cold water the lasagne sheets go to the table where I have big table cloth where the lasagne sheets will dry a little bit while I move to the next stage.
Next stage is the besciamel and setting and on the table we go!

Home made Lasagna basics fresh and tasty for you to try
I have a small space in the kitchen but it does not mean Im not able to cook anything I desire: Now the lasagne we are going to make is for around 4 or 5 people in my kitchen it is 4 people because we love this yummy lasagne and so we have good forks (like they say in Italy 'una bella forchetta' ) someone who can eat good quantity because the food is extra yummy.
We take 3 eggs and 300g of wheat flour, as you see in my picture atleast I do not weigh anymore I just estimate with my eyes also you after you make this lasagne a couple of time you do not have to weigh all the time.
This is the picture to show you the mixture of the flour and eggs. All you need to do to get to the next step of your simple and easy lasagne is to mix with your hands.
After a hard work you see we have a dough. You need to work the dough a lot. My teacher an Italian mom of a friend told me when I make this dough and press it with a thumb slowly it comes up. Then I know my dough is ready.
Note: At this stage your lasagne is nearer than ever, wrap this dough with kitchen (I use cellophane- I im not sure how you call it in your country) for about 30 minutes.
After which now since i have small working space I cut into small balls and roll very very thin sheets (transparent) like in the picture below.

Easy steps of making lasagna in one hour
We divide our lasagne making process into 3 steps
The first step is making of the meat sauce. Here you need garlic a little onion, minced beef and pork (mixture of the 2 is good) but you can use either, then you need oil salt and tomato paste and beef stock make it even from the cubes from shops.
Secret here is to cook your ragu' for atleast 2 hours slowly.

Via Vai is on soi 8 of Sukhumvit, this pizzeria is the only place I love going to other than my home cooked food.
If you are a traveller in Bangkok and wondering where to have a nice Pizza, or lasagne or just anything Italian. Via vai is your number I stop.
As I write this post it is midnight here in Bangkok, but I wish I can rush over to Via Vai for a gelato or a sorbetto
