Steak Diane



Steak Diane is a made with beef tenderloin which they call Filet Mignon.

Steak Diane is made by seasoning with garlic and black pepper and frying quickly on butter.
The decoration of Steak Diane is made from the juices that are left on the pan after frying the beef, you could add some more butter and beef stock and sauteing some broccoli and mushrooms.
Pour the sauce over Steak Diane to achieve its best look and garnish with chopped parsley.

Braciola aka Brijole (plural braciole) is the name of an Italian dish. Brijole are simple thin slices of beef pan fried in their juice, or in a light amount of olive oil. Brijole, probably, one of the simplest dishes in Italian cooking; served with a green salad or boiled potatoes.

Ingredients

Pork Brijole(Braciola),garlic, sage, rosemary, flour, olive oil, salt and pepper
Crush the garlic with rosemary and sage. Put oil in your non stick pan or grill and leave this mix to cook for a minute. In the meantime rub the Brijole with the flour and add to the cooking mix, add salt and pepper and cook.
(you could add tomato if you like)

Reduce Your Cancer Risk From Grilled Meat

Research suggests that grilled meat may increase the risk of certain types of cancer. Red meats, poultry and fish produce compounds called heterocyclic amines (known carcinogens) when cooked at high temperatures. Another type of carcinogen called polycyclic aromatic hydrocarbons are formed when animal fat drips onto hot coals which then flame up and deposit the carcinogens on the meat. You can reduce your exposure to these carcinogens by following the following grilling tips:

Choose lean cuts of meat to grill, instead of high-fat varieties such as ribs or sausages.
Trim fats from meats when possible and remove skin from poultry.
Use tongs or a spatula to turn foods instead of a fork. Piercing meat with a fork allows fats and juices to drip down onto the hot coals which causes flame-ups.
Removed charred areas from meat before eating.
Marinate meats in marinade that contains anti-oxidants (vinegar, citrus juice, herbs, spices and olive oil) as research suggests that this may help inhibit the formation of carcinogens on grilled meat.

This is easy and simple way of grilling meat balls is from my sister in - law.
But, depending on where you are you can adapt it to the ingredients that you have.
Minced meat, parsley, pepper, salt, flour, bread crumbs and olive oil. Mix together in a bowl make the meatballs instead of deep frying them try grilling them in the oven.

1 whole beef tenderloin and clean it

What you need to do is season olive oil, pesto, Worcestershire sauce,steak seasoning add some rosemary.

Process
Make sure you coat the meat well with seasoning. Keep in the refrigerator all night.

Ready to cook?

Heat the oven and cook the beef for 30 minutes.

Serve with baked potatoes etc

Simple Italian food dishes: Braciole summer Barbeque

When Im in Italy I love it in summer. My husbands family have a holiday home in the mountains and when summer finally comes we are all happy to go up there.
First it starts with clearing the garden and taking care of the flowers. After winter snow you can imagine the compound is really in need of help.

What I like about summer is the grilling we do: My mother inlaw loves braciole and grilled tomatoes we also together with the braciole grill some mushrooms.

I'm giving you here a quick brajole- braciole recipe

Pork Braciole: Braciole recipes easy simple for you and family

Ingredients:
1 braciola of pork
4 sage leaves
2 cloves garlic
10 g butter
1 spoon white wine
2-3 spoons of tomato
salt and pepper


Steps
Fry the Braciola on the pan with the butter together with sage and garlic, add the wine and let it evaporate then after which you add the tomato, salt and pepper. Cover and cook for 15-20 minutes.
Enjoy your Braciola!

Grilled Chicken: Turkey?

My oven grilled chicken




I have been grilling chicken pieces with potatoes in the oven for some years now, since I picked my Italian cooking skills. Now I decided to give the whole chicken a trial.

Shopping: Buy lemons,sage, rosemary, garlic and whole chicken.

I stuffed the inside of the chicken with rosemary, garlic, sage and 1 lemon cut into wedges. Then I oiled the oven heavy dish and put the chicken.

I grilled it for a whole hour and this is the results.

If you are grilling turkey or chicken you might want to try with these herbs you will love the smell.

Really? Grilling Causes Cancer?

Ever since 2005, when the U.S. Department of Health and Human Services released its 11th Report on Carcinogens, there has been a simmering concern among summer-fun loving grilling enthusiasts: Does grilling meat cause cancer?

That’s because a byproduct of the searing heat, called heterocyclic amines, may increase the risk of developing some cancers. That browned appearance on meat, fish and poultry is the culprit and the same concerns apply to fried foods and any other cooking method that applies the heat directly, rather than via a liquid stew or steamy air.

And cooking anything releases smoke, laced with polycyclic aromatic hydrocarbons, which are ubiquitous in urban environments anyway, but which also can end up in minute quantities in grilled foods. Those, too, are linked to cancer.

What’s a grill lover to do? Restraint and moderation are probably the best antidote to the worry.
