Home Cooking in 2014 the New family Golden Rule


Home cooking can be simple and enjoyable if you put your mind into it. It takes just a little of planning. For example these are home made Ravioli I have made in my kitchen right here in Nairobi. As long as I can find some parmesan and some locally made cottage or ricotta cheese Im good to go. I make my dough (eggs+flour) mix the cheeses and spinach into a puree and there you go, roll your dough thinly cut the individual pieces, fill in close throw into boiling water and serve with butter and sage plus sprinkle of grated parmesan. A friend visiting was almost in tears to eat home made ravioli in Kenya. It gives more satisfaction than sitting in a hotel and having a ravioli dinner there! Try it

Fruit salad filled Pan Cake

250g of flour
400 ml of milk
4 eggs
pinch of salt
2 spoonfuls of icing sugar
butter

filling:
pineapple
mango
pawpal
spoonful og lemon juice
or any fruit you have in the house


Mix in a container the flour and milk, then the eggs, salt and icing sugar. Leave to rest.

In the meantime wash and cut into small cubes the fruit, put in a container and marinate with the lemon juice.

Prepare the pancakes
on the pan melt butter, add a serving spoon of the pancake mixture, spread it evenly, cook on both sides. Cook all the pancakes like this way.

Ready, fill the pancakes with the fruit salad and decorate with icing sugar.

And here you go!!!!

Pastry cream + pancakes
Ingredients: 100g sugar, 50g flour, 1/2 litre milk and 4 egg yorks

Steps: Put in egg yorks in a heavy based cooking pot, then add the sugar and flour. Beat the mixture until no crumbs form.
Put milk in a flow while continuing to mix.
Cook under small flame until it boils.
Leave it to cook for a while.
Put in another container and continue stirring to cool
Use as a filling for cakes and other pastries.
