Vegetarian secret delight
It is very easy to prepare.
Ingredients:
2 tablespoons oil
2 garlic cloves minced
1 sliced onion
1-2 sliced carrots
1 cup sliced cabbage
1 cup broccoli and cauliflower flowerets
1/2 cup sliced red bell pepper/capsicum
1 tablespoon soy sauce
1 tablespoon sugar
How to cook:
Heat a large pan and add the oil and garlic. Add all the other ingredients. Stir-fry for 5 minutes, until the vegetables are crisp tender.
Serve with steamed or boiled rice

Italian rice cake recipe
My sister in-laws recipe
you will need 200g of rice cooked in 1 litre of milk. When rice is cooked add 50g of butter.
When the rice is warm add
2 eggs
150g of sugar
15g of baking powder
2/3 spoonful of flour
grated lemon peel.
Mix well. Put the mixture in a buttered container.
Cook for 3/4 of an hour at a median heat.
Kids will enjoy this delicious and healthy cake!!

Italian carrot cake
This is a recipe I asked a friend of mine, she had invited us for tea and this cake was great!
Now I want to share it with you here!
Carrot cake
250 gr grated carrots
200gr sugar
100gr butter
150 gr chopped walnuts
250gr plain flour
1 pkt, baking powder
teaspoon mixed spice
Pinch of salt
Beat butter and sugar, until light and fluffy
Add eggs and pinch of salt and beat well
Add flour and baking powder,carrots,nuts,and mixed spice and mix thoroughly
Pour mixture into loaf shaped cake tin and bake at 190C for 45 mins
ENJOY IT!!!!!

Easy simple and quick Italian recipe:beef in red wine
500g beef
1 big onion
red wine
garlic
butter
tomato puree (concentrate)
Cut the beef and onion add the red wine, marinate all night.
Steps:
In a heavy pan heat the butter, add the garlic. Do not brown the garlic add the marinated beef plus a spoonful of tomato puree. Add more red wine to cover the meat.
Cook until the sauce is reduced.
Serve with potato puree or "ugali"
to make a good potato puree
I usually boil my potatoes in water and salt, and marsh them adding a bit of butter.

Beef Casserole: Easy simple dinner beef
Ingredients (serves 4)
700g beef,
1 onion
1 garlic
20g olive oil
1 spoonful flour
1,5 dl white wine
300g tomatoe puree,
300g peas (optional)
Salt
Pepper.
STEPS:
heat oil in a heavy based pan, and add onion and garlic
then add the meat cut into cubes, cook meat on high heat about 10 minutes, turning it.
-Add the flour, mix so all the meat cubes get the flour, then add the wine.
When it starts to boil, lower the heat and cook for 30 minutes or almost all the wine evaporates.
Add the salt, pepper and tomatoe. Add a little water and cook slowly for 2 hours.
Serve with rice or potatoe purèè.
