Food family tree?

Pam Hoffman ha detto...

That Is Fascinating!

You know Mary, so many dishes are like that. Flan - the custard with carmelized sugar - also know in many parts of the world.

It makes me wonder how they get around. Did some things all come from one place and when people migrated, they took it with them?

It would be interesting to see a 'food tree' - I saw something like I'm thinking for languages. Yes, they called it a language tree and most everything comes from something they called Indo-European.

There is one offshoot - it goes to the Russian type cyrilic (sp?).

Do you have any idea if there is such a thing for food?

I'd be interested in seeing that!

Hello Pam.

As I have a husband who's a sort of language buff, I can tell you that my impression is that the parallel is correct up to a certain point.

With languages, you might be tempted to think they all go back to the same root (Indo-European) only if you think in terms of modern European languages, and this - in turn - with exceptions (Finnish, Hungarian). African, Asian, native American languages all come from a different stock, so that the use of a single tree to trace a common origin may not be the right one.

With food, I would think more in terms of multiple original appearances on the one hand, and migration on the other.

With polenta, for example, we are dealing with a type of food that has been a staple for entire population in different parts of the world for millennia, so that it's not too far-fetched to think that the preparation of such food could have become widespread in different regions at roughly the same time in history.

With other, more recent (and, possibly, more elaborate) dishes, the reason for their ubiquity under different names may certainly be related more to 'migration' and the increasing movement that populations underwent later on in history.

Polenta or Ugali what's in a name?

If you are in Italy they will call it polenta, common during winter season. If you are in Italy ask for polenta try with Asiago cheese or just beef and mushroom whichever way you have it you are going to love it.
If you go to Kenya they will call it Ugali, everyday dish its served with kale called sukuma wiki, so if you are in Kenya don't miss out on this. Ugali is poor mans cake.

If you happened to be in Romania, then just ask for "Mamaliga cu Tokitura moldoveasca"

Let's make this dish a world dish!

Egyptian favourites

For the next few days Im going to post some very nice pictures regarding food during my trip to Egypt 3 months ago.
This was during our visit to the pyramids we stopped to have lunch and I was able to see how they made bread. I bought myself a very nice Egyptian cook book so it is a matter of few weeks before we can try out some of my favourites from there.

Weekend VIP treats

Weekend is here. This is the time when most families that are working during the week atleast find time to make some good home made food. Most Italian restaurants make this dish and also find it is very widely cooked by families.

My idea this weekend is Potatoes and chicken baked in the oven.

Your shopping List
Potatoes, chicken thighs, Rosemary if fresh the better, Sage, garlic and onion too will give them an extra great flavour. These are the main ingredients but sometimes I want to make them more balanced so I add carrots and Zucchini.

Preparations:
Brown the chicken thighs a little on a Pan with butter, put peeled potatoes and other vegetables in the oven pan and add salt, rosemary, sage, chicken, onion and garlic. Using hands mix with a generous amount of olive oil. Then bake in the oven.

Enjoy your meal and you can have some salad as a side dish.

Simple easy quick Italian recipes: italian antipasto: bruschette

Italian cooking has never been simplified into these levels before.
After my bread is out of the oven, few alternatives of how you turn it into mouth watering dish in just few minutes.

For example above: Slices of bread with garlic, tomatoes and Mozzarella cheese. Top with olive oil if you have and Origano. Put in the oven for around 2 or 3 minutes.
Tastes great! Serve before a main dish your family and friends will love it.

Bread? Why not?

Been to the supermarket here to find bread for a recipe that I wanted to do for my guests. Not finding an italian bread, or similar that I was interested on, decided to make my own. I hadn't tried so far with my new oven, but guessing from the results on the picture I got what I hoped for. Fresh Italian style bread directly from my kitchen.
This means no more shopping for bread as I can bake freshly from my kitchen isn't that wonderful?
Fresh from my kitchen!

Tiramisu delight

Get the recipe in my older post here

For you to enjoy with the recipes you try here, wine directly in your home, shipping is free!
ingredients:
250g of Mascarpone cheese
3 eggs
finger biscuits
3 teaspoons of sugar
cofee
Cocoa powder

In a container I mix the egg yolks with the sugar. I then beat the egg whites and I add them to the yolk and sugar mixture. Then I add the mascarpone and mix really well.

I then dip the biscuits into coffee and arrange them in the container, alternating a layer of biscuits with that of cream. I continue like this until I have used all cream. Then with the help of a sieve I put a small quantity of cocoa powder on top.
Then into the fridge.
If you have no time can have it done on the previous day.
Enjoy!
If you would like to do it step by step with me, contact me!
Have a nice Tiramisu, will you?
