Aubergines preserved in Oil

Preserved Aubergines in oil
Ingredients:
2 kg aubergines
garlic
Origano
1 l of white wine vinegar
Olive oil
Salt
red pepper

Wash the aubergines and peel if you like (optional)
cut into 1/2 cm pieces, spread salt and leave to seep out the water.

After few hours ,(put vinegar to boil with same amount of water) rinse and put them for 2 minutes in boiling vinegar-water mixture.

remove them and leave to drip all the water in an inclined surface.
Then put into vases alternating with Origano, garlic and red pepper. Fill with olive oil making sure you don't leave bubbles of air and that the oil covers the vegetables well.
Close tightly and sterelize for 30 minutes.

Ps. In the image above instead of boiling them I grilled them.

as you know I am now in Kenya and happy to bring you some recipes from Kenya, while abroad I missed a lot polenta or what is called Ugali in Kenya.
So for the last month I have been eating a lot of Ugali and Im now sharing this with you here. Be sure to receive lots of hints, ideas and secrets of making a Kenyan typical dish wherever you are.

In this picture from the other night dinner we have Ugali, oven grilled fish(tilapia) widely available here at unbeatable prices and kales of course this is eaten in great quantities here. Sure in the country everyday people eat tonnes of them.
