Italian simple recipe: fresh homemade pasta


Fresh Pasta is very easy to make, all you need is flour and eggs, that's it nothing else.

How do you go about it?
simple: for every 100g of flour you need 1 egg.

make a mould with the flour and in the center make a hole and put the eggs,
you need to work a lot the mixture until you get a smooth dough, then leave to rest for an hour.
Then what next?
You divide into small balls, roll each at a time.
But?
Need to roll it until it is very thin, then cut into shapes that you want. Could be the long strips (tagliatelle) or the short ones, next we learn how to make the filled pasta, for now learn how to get to the simple basics. Cut into strips.

Note!! A true Italian Pasta made freshly has only flour and eggs, no salt no water, this is what I have learn't grandmoms I have learn't from.
